Where the poppy candy comes from: Poppy candies are part of the big family of candies made of boiled sugar which represents about 70% of the confectionery. They are made by melting a mixture of sugar and glucose syrup which, when melted, is perfumed with petal extract of poppy flowers and slightly raised with a hint of citric acid. We read in "The modern confectioner" written in 1917 by JJ Machet: "it was formerly a large consumption of poppies because it is soothing and facilitates expectoration in dry cough". A little more and we ask for reimbursement of this delicious candy by social security!
