Immediately we see and understand that this product is beautiful, almost ceremonial as the purity of the color is intense. The fragrance of orange blossom but also of jasmine is present, but everything is in delicacy. The visual promise is held once the treat in the mouth. The sensation of softness and delectation makes you want to close your eyes and enjoy the long and delight taste. We feel the end of sugar veil tear and behind reveals all the flavor of this very beautiful greed.

Ingredients: Wheat glucose syrup, sugar, invert sugar syrup, pork gelatin, wheat starch, sorbitol syrup, natural flavor: orange blossom flavor.

At the origin: Marshmallow paste has a plant with emollient, softening and resolving properties (Althaea officinalis). This explains its widespread use in the pharmacopoeia of the time. Leaves and flowers were used in infusion and root in decoction. This root was given to suck small children to calm irritations caused by the growth of teeth. From the marshmallow with orange blossom and gum tragacanth (harvested from the shrubs that produce it) apothecaries and pharmacists also made lozenges and tablets for coughing. But gluttony interfered and marshmallow paste was made more flexible by combining the marshmallow root crushed with water of orange blossoms, gum arabic; all lightened by egg whites. Molded in stick, this dough knew a great fervor. But its manufacture required a lot of thoroughness. In fact overcooked the batter turned gray instead of remained white and took a bad taste. This is how the marshmallow paste was going to lose the ingredient that gave it its name! Many manufacturers now use aerating agents, gelatin and flavors rather than natural fragrances. These products are very popular with children and marshmallow is still in our cultural heritage.

At the end of the 19th century, about a dozen of homemade confectioners  provided all sort of confectioneries and  sweet tooth. However, the most important speciality of Montpelier was and is liquorice and arabic gum.


The raw materials are natural like arabic gumliquorice, honey. You can find here a range of organic confectioneries.
 


This workshop was founded in 1890. And it is the last to prolong the life of this know-how. However it continue to innovate and create contemporary confectionery like the Tutti fruti marshmallow. Also near traditional liquorice sweets and Lichen gum, it's offer modern confectionery. But only one axis is followed : allready seekink to the highest quality.
