At the origin: Marshmallow paste has a plant with emollient, softening and resolving properties (Althaea officinalis). This explains its widespread use in the pharmacopoeia of the time. Leaves and flowers were used in infusion and root in decoction. This root was given to suck small children to calm irritations caused by the growth of teeth. From the marshmallow with orange blossom and gum tragacanth (harvested from the shrubs that produce it) apothecaries and pharmacists also made lozenges and tablets for coughing. But gluttony interfered and marshmallow paste was made more flexible by combining the marshmallow root crushed with water of orange blossoms, gum arabic; all lightened by egg whites. Molded in stick, this dough knew a great fervor. But its manufacture required a lot of thoroughness. In fact overcooked the batter turned gray instead of remained white and took a bad taste. This is how the marshmallow paste was going to lose the ingredient that gave it its name! Many manufacturers now use aerating agents, gelatin and flavors rather than natural fragrances.
